
Pesto Sauce! A very mysterious and "matured taste" of sauce to be .. I never tried the authentic pesto before neither tried this kind of sauce in nowhere, but the greenish color looking sauce on the pasta makes me intensively to try it out so awfully.
So I gave it a try and wow! Surprisingly the method and ingredients were really very easy! (Wait wait wait, tho easy but it's easy to fail as well)
So here are the <Ingredients>
One cup of fresh basil leaves (mostly recommend the Thai basil, I'm using sweet basil, and that's the only option I can get in the supermarket around my town)
Three cloves of fresh garlics
A handful of raw pine nuts (can be replace with walnuts)
Grated Parmesan cheese
Extra Virgin Olive Oil
Salt & pepper
<Methods>
Firstly, toast the pine nuts in the pan, do not over toast it. Put aside
Wash and briefly dry the basil, put all into your food processor or blender.
Add in the garlics and pine nuts. Blend them well.
Add in olive oil, Parmesan cheese and flavor with salt & pepper. Blend well and Done.
Isn't it easy as 1,2,3?
I did quite lots of research before i start something new in my kitchen.
From what I studied, the traditional Italian pesto is supposed to be blend with mortar and pestle to sustain the freshness and the taste of the ingredients, (you know, it was told that the speed of the blade of the electrical blender will create heat and make the ingredient's taste changes a bit), and the pine nuts not supposed to be toasted . I'm not so particular with those little tiny difference in taste, so I'll just go ahead and try out with my new hand blender recommended by my friend!
Overall, when I finished blending the sauce, and give it a quick try, I was totally frowned LOL! Because it taste so "greenish", (I hope u can get what I meant),the taste was not so impressed! I don't think my family will like this kind of taste! What should I do!? So I started to grab whatever ingredients and herbs I have in my kitchen and start doing experiment.
So here's the additional ingredients I added
Two cloves fresh garlics
More Parmesan cheese
More salt
More pepper
More garlic powder
A little bit of lemon juice
So it turns out much more acceptable but I dare they will not like it still, buahahaha!
Well, you gotta give it a try to show people you actually "tried" pesto before you tell anyone you like it or not! LOL
At the end, I did not mix the sauce with all of the cooked pasta, I made two versions of dinner menu, just in case everybody can at least eat something for dinner. (I'm a really caring person!)
I made pesto and bolognese pasta, at the end bolognese won as expected!
Poor pesto, I tried very hard to finish the pesto pasta, but i was having a big ulcer on my tongue (yes, AGAIN!) so I can't really eat much that night. Even my not-so-picky eater Leah also spit out the pesto pasta...well.. Good try Emi & pesto, we tried our best already!
However, I will try out a nice pesto when I found one in the restaurant in future, just never give up easily k. :)
