Mediterranean CousCous


Couscous, an alternative choice in between rice and pasta. 


<Ingredients>
1/4 cup couscous
1/2 cup water or stocks

A cube of butter
One big tomato, peeled and chopped 
Palm size sweet potato
Two sliced courgette/green zucchini 
2-3 leaves of fresh basil or a pinch of dried

<How to make>
1) boil the water or stocks, pour in the cous cous and let simmer for 3mins. Cover for another 5mins. Fluff with a fork then put aside.


2) steam the sweet potato and courgette until soft and cooked, chop well.

3) add the butter to a pan, put in the chopped tomatoes and basil. Stir until soften. 

Then add in the sweet potatoes and courgette, stir until well cooked. 



4) add in the cooked couscous, turn off heat and stir well.

5) season with salt n pepper (optional), Bon appetite!

Baby Leah likes it, I use vegetables stocks as it made the dish more flavorable and delicious.
