The egg in the picture showed was a bit well cooked, because I don't want my 17 month Leah to eat raw eggs at this young age.
These are the common baked eggs :D *yummeh* (picture adapted from thenourishinghome.com)
Although kiddo version do not have runny yolks, it does not mean it's not yummy at all! Trust me, they are just as tasty yet healthy!
Bake egg is very simple, and can be prepare in advance. It's just all about layering and mix-n-match your favorite combinations with the egg. Such as capsicums, onions, any greens you like (spinach, green onions, fresh chives, bak Choy etc)' any meat you preferred (beef, lamb, pork, sausages, bacon etc), you can even use fruits (banana, grapes, apples, pear etc)! So many combinations, if you're out of any idea what to cook for your little ones or busy/lazy, bake egg is a very good choice to be served :)
<Ingredients>
One whole egg
Oil (I use EVCO)
1/2 tsp of dried chives (any other herbs can be)
Chopped lean ham
Chopped tomatoes
Shredded cheddar cheese
<How to make>
Preheat oven 180degree C
Put the oil and herbs in the bottom of the ramekin
Crack an egg on it, then top with tomatoes and cheese.
Bake for 15-20mins or until preferable texture.
Happy cooking : )
