
This is my second attempt for baking bread loaf using oven. I did not take photos of the processing cause I never expect I will success on doing it.LOL! So I'll just share the recipe here, and will upload more pics when next attempt! This is quite simple, since I use a mixer to knead the dough, it helps me save a lot of work, but there are a few keens should be take cautions as well.
**remember**
- not to over knead or put too much flour,
- the liquid ingredients should not be too hot (it will kill the yeast),
- I made this on a rainy day so I put the dough into the preheated 100c oven for the rising process (remember not to keep baking, if not ur yeast will all die GG), if it's a warm or hot day on ur baking day then just leave it covered in a big bowl on your counter top!
- you can poke your finger down the risen dough, if the hole dint bounce back then it's risen well
- pull out a small amount of dough and try to pull along with both hands, if the dough can be pull without breaking easily and you can see the transparency on the dough, then your dough is risen beautifully!
- pls dun give up easily if you failed once or twice or thrice! :D
BTW, this ingredients yield two 9" loaf bread, I was shocked with the huge risen dough cause I did not read the recipe carefully...so I ended up made one 9" loaf, one 8" and some buns... Luckily my grandma eats bread everyday....!
<Ingredients>
2 cups Wholemeal flour
4-5 cups bread flour
2 Tbsp sugar
1 1/2 tsp salt
14g active dry yeast
1/4 cup honey
2/3 cup milk
1 2/3 cups water
56g unsalted butter
<how to make>
1) mix Wholemeal flour, 4 cups bread flour, sugar, salt and yeast in the mixing bowl.
2) in another bowl mix together honey, milk, water and butter. I put the mixture into the microwave for 10seconds to heat till hand held luke warm, mix well and add all at once into the dry ingredients.
3) use the kneading hook to mix the mixture till clear off the side of the bowl, add in more flour slowly when needed.
4) place the dough onto the floured surface and knead with hand till not sticky anymore, add more flour when necessary.
5) put the dough into a greased big bowl ,cover with clean cloth, and let rise at least 30mins or until doubled it size.
6) cut half of the risen dough and place on a flat surface , roll out flat with a roller and roll the dough like cinnamon roll.
7) grease the loaf pan, put in the rolled dough , let both sides of the dough get slightly oiled from the greased pan, place the seamed side face down. Cover with clean cloth and let rise for another 30mins.
8) bake with 210 degree C for 25mins. Let cool on a rack.
9) for small buns, just roll out small balls from step(5) , can put fillings or just plain, again, let rise for another 30mins before bake with 210 degree C for 12-15mins.
