I love to serve eggs for breakfast, I think they are nutritious and yummy for a good start of the day. Here comes a simple apple pancake recipe.
One small apple
One egg
I tsp of Extra Virgin Coconut Oil (optional)
A dash of milk
A pinch of cinnamon powder
A pinch of molasses sugar (optional)
<Method>
Beat the egg, add in the milk, oil and sugar. Mix well. You can whisk a little bit harder to incorporate the air in it to make the egg taste more fluffy.
Peel and dice the apples, add in cinnamon powder. Pan fry for 3mins or until soften. Put aside.
Pour the egg mixture in the pan with low heat, place the diced apples on top and when the sides started to bubbling, you can flip/turn the pancake and continue to cook until well done for kids or a bit runny for adults.
As the pictures showed, I use two non stick pans to flip the pancake..i was too stupid to flip it over with a spatula and tongs/chopsticks... So it seems working, but mummy may need to do double washing job for extra pans (tiring!!)
Overall the apples and cinnamon are always the best pair for all kinds of food, kids would never resist this simple and yummy recipe.
