<Ingredients>
Big potato, peeled and cooked
Butter
Milk
Salt and pepper
Cheddar cheese
Parmesan cheese
Fresh/Dried chives
1 egg, separated
<Method>
1) warm the milk and put a knob of butter into it and let it melt and mix well.
2) in a bowl, mix in the cooked potato, grated cheddar cheese and Parmesan cheese, egg yolk, black pepper and chives. Mash and mix well.
3) add in the milk and butter mixture. Blend well and put aside.
4) whisk the egg whites until medium peak.
5) add the whisked egg whites into the potato mixture and mix gently. Do not over mix.
6) place into the ramekin and bake 180Degree C for 20-25mins until fluff and puff
