<ingredients> make 12 servings
125g softened unsalted butter
125g sugar
3 eggs, separated
1tbs finely grated lemon zest
2tbs lemon juice, plus extra 2tsp for the frosting
180g plain flour
1tsp baking powder
200g plain yogurt
1/3cup (55g) icing sugar
<How to make>
1) beat the butter and sugar until pale and fluffy. Add egg yolks one at a time, beat well. Mix in lemon zest and lemon juice. Blend well.
2) sift flour and baking powder together. Fold into mix, alternating with yoghurt.
3) whisk egg whites in another bowl until firm peaks. Then fold into the mix, fill cases.
Mix the icing sugar with the remaining lemon juice until thickened. Spread some on the cupcakes and serve.
