Apple meatloaf cupcakes


Meatloaf
<Ingredients>
One big Granny Smith green apples, peeled and cored, chopped.
250g minced pork
200g minced chicken
200g minced salmon fish
2 tbsp soaked rolled oats
1 tsp Italian mixed herbs
Salt and pepper



Frosting
3 big potatoes, peeled and cut into pieces
3 tbsp sour cream
1 tbsp Butter
Salt and pepper


<How to make>
The meatloaf
1) mix the minced pork, minced chicken, minced salmon, chopped apples and rolled oats, season with salt and pepper and Italian mixed spices. Mix well.
2) pour into the cupcakes liner. 
3) bake 180Degree C, 45mins or until cooked.
The meat sauce and apple sauce will leak out, remember use a tin pan or double layer of the cupcake liners.


The frosting
1) steam the potatoes and mash until fine.
2) sieve the mashed potatoes.
3) mix in the butter, sour cream and season with salt and pepper
4) fill into the piping bag.
5) frost the cupcakes when cooked. Sprinkle some dried herbs for garnish.

Cheesy Cauliflower sauce with pasta


<Ingredients>

 
Onions, chopped
Garlics, chopped
Butter
Milk
Cauliflower, florets
Cream cheese, softened
Cheddar cheese, grated
Salt and pepper
Pastas, cook accordingly

<How to make>
1) melt the butter in pan, stir in onions and garlics, sauté until fragrant and onions become soft.

2) pour in the milk and cauliflower florets, let simmer a while, then add in the cream cheese. Stir well and mix well.
3) put in the cooked pastas, stir well and mix in the cheddar cheese, season with salt and pepper.

 


五香烤雞腿


全雞腿 一隻
五香粉 一大匙
鹽巴 適量
胡椒粉 適量
料酒 一大匙

《做法》
1)雞腿塗抹醃料,醃隔夜。
2)烤210度,25分鐘。依據各不一樣的烤爐。雞腿刺入不出血水就好。


Sushi for kids


Sushi rice
1 cup short grain rice
2 cups water
20ml rice vinegar
15g sugar
A pinch of salt

<How to make>
1) cook the rice as per instructions showed.
2) after cooked, pour in the vinegar, sugar and salt, mix well and put aside let cool.

Bread pudding

 
<Ingredients>
1 ramekin
1 Bread toast, cut into diced
1 Egg
Handful of raisins or any dried fruits
1 cup milk
1 tsp Cinnamon powder
1 tsp sugar


<How to make>
1) cut the bread into dice together the raisins place into the ramekin
2) beat the egg and pour into the ramekin
3) in a bowl, mix in the milk and cinnamon powder, pour on top the bread,
4) preheat oven 200degree C, bake for 10-15 mins.

Lentil in dhal style


<Ingredients>
Yellow lentils
Turmeric powder
Cinnamon powder
Onion, chopped 
Garlic, a slice
Salt and pepper 
Potato , diced
Water


<How to make>
1) soak the lentils overnight
2) sauté the onions and garlics with olive oil, pour in the soaked lentils and diced potatoes then add in the water and simmer, add in the turmeric powder and cinnamon powder.
3) season with salt and pepper. Serve with rice or roti


Avocado and corn purée as dressings or sauce


<Ingredients>
Ripped avocado
Steamed corn

<How to make>
Blend two ingredient until smooth.

雞肉蝦泥芝士球


《材料》
雞胸肉 剁碎
蝦 剁碎
Rolled oats 泡五分鐘
胡椒粉
義大利綜合香料
鹽巴
任何一種cheese
淀粉
麵包糠

《做法》
1)雞胸肉和蝦肉剁碎成泥,用鹽巴,胡椒粉和些許淀粉調味。加入泡軟的rolled oats,拌勻。
2)用手抓適量的肉泥,壓一個窩,釀入芝士塊,揉成團。
3)肉團裹上些許淀粉,然後沾蛋漿,再裹上麵包糠。
4)放入熱油炸熟,中小火以免焦了。

**rolled oats 可以增加口感而且泡軟得麥片可以是肉塊更moisture,吃起來不會乾干的
*** 我是用Buffalo熱力電爐烤地,所以可以在烤盤裡淋點橄欖油。

Vanilla bean paste and essence


Vanilla Essence

<Ingredients>
250ml 40%alcohol I'm using Absolute Vodka
5 vanilla beans

<How to make>
1) split each beans and leave 1/2inch at both edge
2) put in the ingredients in a sterilized glass jar and let it infuse at least 6weeks before use. Shake the bottle a bit every week.


Vanilla Bean Paste

<Ingredients>
30g Vanilla beans (ard 12 beans)
200g organic raw sugar
120g water
A few drops of lemon juice


<How to make>
1) blend the sugar and vanilla bean in the blender until fine.

2) boil the blended vanilla sugar with water and a few drops of lemon juice.

Boil until the sugar dissolve.

3) sieved and store in the bottle jar.



**the purpose of the lemon juice is to avoid the sugar become crystallized while cooking! can be substitute with cream of tartar or corn syrup.





Squid ink seafood risotto


<Ingredients>
300g Risotto rice
500ml stocks/ water
50g French butter
1 cup white wine
6 cloves minced garlic 
1 chopped onion
Clams, washed clean
Prawns, peel and clean
Squids, clean and cut into rings
1 pack of squid ink/ fresh squid ink sack
Salt, pepper, chillies flakes


<Method>
1) pour some olive oil in the pan, sauté the garlic until fragrant.
2) put in the clams and pour in the white wine to shimmer until the clams all open. Remove the clams and put aside, leave the sauce in the pan.
3) alternative sauté the prawns and squids until cooked, remove and put aside.
4) in another pan, sauté the onion and garlic until fragrant, pour in the rinsed risotto rice and the garlic white wine sauce, stir fry and keep add in the water or stock until the risotto absorb the liquid and cooked. Keep stirring to avoid burnt.
5) add in the squid ink, the butter and the chillies flakes, keep stirring.
6) season with salt and pepper, serve with the seafood.





Homemade American pancake


<ingredients>
100g self raising flour
60g sugar
A pinch of salt
150ml milk
1 egg
1/2tsp vanilla paste/essence 

<Method>
1) mix together the flour, sugar and salt.
2) beat an egg and slowly add in the milk, mix well until smooth batter
3) mix in the vanilla paste
