I omitted the pork jerky
<Method>
1) soaked the black beans in water overnight.
2) mixed 1/2cup salt, 1/2cup and 1/2tsp black peppercorn in 5cups boiling water let cool, then put the pork feet and tail let brine overnight in the fridge.
....the next day
3) boil a pot of water and cook the pork feet and tail for 20mins to reduce the saltiness
4) mix in the chicken stocks and water and add in the soaked black beans bring it to a boil, let simmer for an hour.
5) after an hour, add in the pork feet and tail, continue simmer for about an hour.
6) in a pan, sauté the onions, garlics, smoked sausage, bacon, ham and herbs until fragrant, then put them all into the pork soup pot, continue simmer.
